When you arrive, sip on a complimentary Earp No. 8 Dry Gin and Tonic, before you sit down to enjoy a four course dinner curated by Earp Distilling Co's head chef, Peter Streckfuss, and guided by the team at Binnie Beef.
The Binnie family have been operating in Australian Agriculture since 1835. Based in the Hunter Valley on 7,000 acres of prime cattle breeding country, they produce premium full-blood Wagyu beef known for its rich flavour and hearty fats. Binnie Beef is highly sought by top chefs worldwide.
The menu for this Newcastle Food Month event has been crafted to compliment the beef's rich qualities and exalt local ingredients. It is sure to delight your senses.
Canape: Smoked tongue crouton - Green tomato pickle, watercress.
Served with sides of: Crispy potatoes - Murray River pink salt and fresh herbs, seasonal veg - confit garlic dressing and roast almonds and rocket salad - Sherry vinaigrette, packham pear, walnuts and Parmesan.
Dessert: Tiramisu - Dark chocolate, reggie's rum, mascarpone.
