The evening will feature the finest ingredients from Rowlee's home in Orange, NSW, highlighting the region's humble vegetables and sustainably sourced NSW fish.

As old friends who share a deep respect for the environment, they are coming together to create a dining experience that highlights their mutual commitment to sustainability and local produce.

Nestled in the foothills of the Blue Mountains, Restaurant Amara, located at Spicers Sangoma Retreat, is a one-hat restaurant recognised by the Sydney Morning Herald Good Food Guide. Led by Head Chef Will Houia. Amara focuses on vegetable-driven dishes with a commitment to local produce and sustainability.

Rowlee Dining and Bar's Head Chef Simon Furley, originally from Bath, England, has been in Australia for nine years earning recognition at acclaimed restaurants in Queensland before his move to Orange. His previous restaurants have earned one-hat accolades from the AGFG. Simon is passionate about wood-fired, nose-to-tail and root-to-shoot cooking, local sourcing, and building strong relationships with farmers and producers. Since the launch of Rowlee Dining and Bar, he has been dedicated to creating menus with sustainability at their core.
